Red Beans & Rice

Recipe for red beans and rice, a favorite around my house.

 2 tablespoons of olive oil

 1 1/2 cup chopped onion

 3/4 cup chopped green pepper

  3 celery stalks,  chopped

Cook for about 4 minutes

Add 3 bay leaves, 1 tbsp of parsley, 1 tsp of thyme, 1/4 tsp cayenne, and 3 tbsp chopped garlic chopped

Cook about 4 minutes

 Add 4 cups of cooked red beans and 2 cups of chicken/vegetable broth

Season with salt and pepper

 Bring to a boil, and simmer until thick
