White Bean, Sage, and Garlic Soup
It doesn’t take long to make this flavorful soup. Ready in about 30 minutes, it is a flavorful meal in a bowl. For something different try chopped walnut or hazelnut instead of cheese.
1 tbsp olive oil
2 tbsp minced fresh sage leaves
4 large garlic cloves
4 cups chicken/vegetable broth
1 bay leaf
2 cups white beans lightly crushed
½ tsp salt and pepper, or to taste
1 large egg, lightly beaten
Toasted bread for serving
¼ cup parmesan cheese for serving
In a medium sauce pan over medium heat, bring oil to a ripple and stir in sage, garlic and bay leaf. Cook mixture until fragrant, about 2 minutes.
Increase heat to medium high and add broth, beans, salt and pepper. Bring to a boil, reduce heat and simmer partially covered for 15 minutes.
Remove bay leaf. Remove pan from heat and whisk egg into soup.
Ladle soup in to bowls, sprinkle with cheese, serve with toast. Serve immediately
